Confused about what ingredients to buy? Not sure about a substitution? Here’s everything you might need to know before using this Turkish delight recipe…

Our hand-made, refreshing and exotic rose and lemon flavour is a genuine Turkish treat, is one of the most delectable sweets in the world. Enjoy this decadent Turkish delight with a warm cup of tea or just as your dessert. Pour 150ml water into a pan and add 9 gelatine leaves, breaking them in half, if necessary, so that they all fit. Leave the gelatine to swell or ‘bloom’ a little for 5 mins.Rosewater is one of the most common flavors of Turkish delights but there are endless variations. Once you start making it at home there is little doubt you will come up with a few of your own.

In a clean, heavy-based saucepan add the sugar, lemon juice and 250ml/9fl oz of water. The mixture should reach about halfway up the pot. Heat gently to dissolve the sugar, stirring occasionally with a clean, metal spoon. This will take about 15 minutes. if you don’t have a silicone pan, line a normal baking tin with baking paper and grease/coat in cornflour as per the recipe. Instructions Nuts are also common. When using nuts you only need to add about 2 ounces or about a ½ cup of nuts. Make sure you chop them before adding to the candy. Wet the sandwich tin with cold water, then pour in the Turkish delight mix. Leave in a cool place to set overnight. If it hasn’t set, allow another 8 hours or if possible another day to set; as humidity, coolness of the room may impact drying time. .

Oil your pan and dust with cornflour. Tap out any excess. Then pour in your Turkish delight and leave to set overnight at room temperature. At Özerlat we’ve matched our authentic Turkish coffees with lokoum from the legendary confectionery house Haci Bekir, which was established by master confectioner Bekir Efendi in Istanbul in 1777 (making Haci Bekir one of the oldest 100 companies in the world). Do not store Turkish delight in the fridge, as the fridge would make it sweat, drawing more moisture out of the candy. Perfect for Gift Giving Afiyet Olsun," as we say in Turkish, which means “May you be happy and healthy with this food.” I hope you enjoy making this lokum recipe in your home as much as I do in mine. Once dissolved, brush down the sides of the pan with a wet pastry brush (this prevents sugar crystals from forming). Turn the heat up, insert the thermometer and bring to a boil. Without stirring, cook until the temperature on the thermometer reaches 115C/239F. This will take around 10 minutes. Once it reaches that temperature, remove the syrup from the heat and let it cool slightly. Decorate with glitter: If using, go ahead and sprinkle the edible glitter over the Turkish delight.Carefully turn out the Turkish delight and cut into 24 squares with a lightly-oiled knife. In batches, toss the squares in the icing sugar mixture until they are well coated. For dusting, when set, mix the icing sugar and cornflour in a large bowl. Sprinkle 1 tablespoon of this mixture onto a board.
